“These oatmeal crispies have been renamed, first, to honor the donor in La Grange, Ill.,” Lu Carlos writes, “secondly, because nobody will believe that they are made with oatmeal. They are so simple to make, healthful and appropriate for any occasion. Compliments are guaranteed.”
ISABELLAS
1 cup butter or margarine
1/2 cup sugar
1 teaspoon vanilla
1 1/4 cups flour
1 1/2 cups oats
Dash salt, optional
Powdered sugar
Cream butter and sugar until light. Mix in vanilla, then flour, oats and salt. Chill thoroughly. Shape into small balls and place 3 inches apart on ungreased baking sheet. Flatten using crisscross indentations with fork. Bake at 350 degrees 12 to 15 minutes. Sprinkle with powdered sugar, if desired. Makes 2 to 2 1/2 dozen.
