Josh Jensen, Calera Wine Company
We’ve been doing a bunch of comparison tastings with our wines, as blind as we can make them. We serve ours alongside some super-expensive French Burgundies. The ’94 Richebourg from Domaine de la Romanee Conti was really impressive: the structure, the balance, the harmony. It’s hard to make generalizations, but I guess I’d say Burgundies have higher acidity than California Pinot Noirs, therefore they’re somewhat leaner.
